LOOKING ONTO THE NEW CHAPTER OF THE RITZ CARLTON BAHRAIN’S F&B, WHAT WILL BE THE MAIN FOCUS?

       WF: Our aim is to provide our guests with extraordinary culinary experiences, exceptional service, innovative concepts, a blend of local and international flavors, and an exquisite selection of beverages. We will continue to provide the legendary Ritz-Carlton service that the property is actually known for. Our goal is to surprise and delight with creative menus, unique dining experiences, and collaborations with renowned personalities. By staying ahead of the curve, our focus is to consistently provide fresh and exciting new offers to our esteemed guests.

 

CAN YOU SHARE WITH US SOME OF THE CREATIVE PROCESSES THAT GO INTO CREATING YOUR GUEST EXPERIENCE?

       WF: Here Here at The Ritz-Carlton, our creative process includes understanding our guests’ needs, developing innovative concepts, mapping an authentic guest journey and identifying touchpoints where our team’s creativity can be infused, culinary innovation, collaboration between the kitchen and service team, and last but definitely not the least, is to have the commitment to continuous improvement. The industry is constantly evolving, and by embracing a mindset of continuous improvement and innovation, we adapt and eventually exceed our guests’ expectations.

 

WHAT TYPE OF CULTURE DO YOU WISH TO IMPLEMENT?

       WF: The Ritz-Carlton culture is already the best. We live what we believe, and I think it is very important to bring this to life. I joined the property to elevate the experience of not only our guests but also our Ladies and Gentlemen. I am here to support our team in their career growth and at the same time, push the boundaries of the guests’ experience. I would also want to instill a culture of excellence where attention to detail is paramount. This involves cultivating a mindset of meticulousness and a commitment to delivering the highest possible standards in every aspect. Lastly, by ensuring that we maintain anticipatory service, I believe we can win more recognition and awards.

 

WHAT DO YOU HOPE TO BRING TO BAHRAIN’S F&B SCENE?

       WF: My goal is to elevate Bahrain’s food and beverage scene by offering world-class dining experience and creating lively, vibrant parties. By providing the best cuisine, crafted with care and creativity by our dedicated chefs, we will deliver a memorable dining experience that exceeds expectations. Additionally, through the organization of vibrant parties and events, I aspire to cultivate an atmosphere of excitement and celebration, bringing people together to enjoy exceptional food, music, and entertainment.

 

WHAT ARE SOME OF THE TRENDS YOU SEE IMPACTING THE F&B SECTOR IN THE HOSPITALITY INDUSTRY?

       WF: Social media definitely plays a big role these days. I have seen a significant demand for Instagram-worthy cocktails and desserts. On social media, the look is more important than the taste. Our guests are also more conscious so the emphasis on healthier eating habits and sustainability is becoming a trend. Technology also plays a crucial role in the industry. Advancements in automation and artificial intelligence are things that we have to look into as well.

CAN YOU DESCRIBE YOUR CULINARY PHILOSOPHY?

       JS: The core of my culinary philosophy lies in sourcing the finest available produce, with a strong emphasis on creating an immersive and unforgettable dining experience for our guests. My belief centers around the idea that less is more, prioritizing quality over quantity.


WHAT FACTORS INFORM YOUR CHOICES IN DESIGNING THE MENU AT THE RITZ- CARLTON BAHRAIN?

       JS: Our menus are actually influenced by a variety of factors which include the availability and quality of ingredients, seasonality, guests’ preferences and dietary needs, culinary trends and influences, cultural traditions, the restaurant’s overall concept and theme, and the chef de cuisine’s own creativity, expertise, vision, and history.


WHAT DO YOU THINK PEOPLE ARE LOOKING FOR IN A DINING EXPERIENCE IN THE RITZ-CARLTON BAHRAIN?

       JS: Our Our guests’ expectations continuously evolve and nowadays they don’t just seek culinary excellence but also a combination of luxury and exceptional service. They look for memorable experiences that go beyond just the food. They are also conscious about sustainability and expect a menu that showcases high quality ingredients, creative and innovative dishes, and a variety of options that cater to different tastes and dietary preferences. I believe our guests seek a dining experience that surpasses their expectations andleaves a lasting impression. I am proud to say that The Ritz-Carlton, Bahrain offers a variety of award-winning restaurants and lounges that provide all these.


WHAT WOULD YOU SAY IS YOUR SIGNATURE DISH?

       JS: Passion I can’t really stick to a specific dish being around in the kitchen for over 32 years in different continents, but I must say that I love doing barbecues. My expertise and dedication in this type of cooking allows me to craft a wide variety of delectable dishes on the grill. I take pride in experimenting with different techniques, seasonings and flavor profiles to bring out the best and utterly satisfying flavors in every barbecue dish that I make.


WHAT ARE THE QUALITIES YOU BELIEVE ONE NEEDS TO BECOME A SUCCESSFUL CHEF?

       JS: Passion and patience. These qualities provide the fuel and mindset needed t overcome challenges, innovate, and consistently deliver outstanding culinary experiences. Passion and patience also allow an individual to continually refine their skills and strive for excellence. Chefs must understand that mastery is a lifelong journey.
